Basic Green Chile Sauce
1T olive oil
1/2 c chopped onion
1 clove garlic, minced
1/2 c chicken stock
2 c chopped green chile
(roasted, peeled, seeded)
1/2 c chopped tomato (fresh or canned)
3/4 t cumin

I have made this recipe using a mixture of mild and hot Hatch green chilies. It is great!
If you roast your own chilies, take the seeds and veins out before you roast them.
